Preheat the oven to 170° fan/190°C/Gas 5. Cut the top from your gourd, just deep enough so that you can get a teaspoon inside it.
Hollow out the pith and seeds. Rub the butter around the inside and season with a little salt.
Poke in the cheese and grate and grind over the nutmeg and a good grinding of black pepper.
Pop the lid on the gourd, then place it on a tray and roast it for about 30 minutes, or until the skin and flesh feel soft to the touch.
Remove the little darling to a plate, lift the lid and tuck in with a spoon, being careful not to burn your lips.
