There are many disguises for margarita but personally its simply sugar syrup limejuice and tequila. I don’t like ice cubes invading my glass as properly chilled in the shaker I will have drunk it long before it becomes room temperature. I can’t really argue the salt, it’s a question of taste but I like it.
Take your martini glass or small beaker and run a lime wedge around the rim. Upend the glass and press lightly on a small side plate of ground sea salt. Turn it the right way up and attend to the mixing
Squish the limes on a squeezer or through a sieve as you will need to measure it and avoid pips
Fill the cocktail shaker with six cubes of ice. Pour over with four measures of white (blanco) tequila. Pour over 2 measures of sugar syrup see page (00) and 2 measures of freshly squeezed limejuice. Do not use instant limejuice, BAD!
Apply the cap and shake vigorously fifteen times. Remove the nozzle cap and pour.
Drink immediately but not in one go.
